You might check out the work of this group, doing a similar thing, although they are not concerned about a sealed system (they are much harder to make and balance). They use salvaged materials (e.g. 2L soda bottles) to have students create their own ecosystems and design experiments about them, or you could use their instructions to whip a batch of kimchee.
