Well, you could always start at Ben Heck's site for ideas on making some of those portable.
IMHO, it sounds like the GC is the best find. You could put GC Linux on it and see what you can do from there. Maybe a car computer? YMMV - I'm not a big gamer; the only modern console I have any familiarity with is XBox classic.

You could make a unit that easly switches between all platforms with a touch of a button. you could even go as far as making a cross-platform controler. I'm thinking that xBox and PS2 have the same amount of buttons, so you could use your favorite one. It would be really cool to make a single CD slot, that would take the CD and put it in the correct spot without even thinking about what platform the game is for. It sounds great, but I havent a clue how to make it choose the correct CD or even make a controler cross-platform. Let me know what you think
