I'm still a fan of the Olimex AVR Kits at Sparkfun.com
Just Buy:
Development Terminal - ATMega128
AVR In Circuit Emulator with USB Interface

Download the free (as in beer and speech) WinAVR package:
http://winavr.sourceforge.net/

and the free Procyon AVRlib package
http://seasight.dforge.cse.ucsc.edu/details/data_acquisition/ATmega128/avrlib/

And you have an exceedingly powerful learning kit under $100 with buttons, 2 Line LCD, Buzzer, LED, and Relays.

The Best Part is that the kit is sufficent for may real world professional projects as well
