Remember those over-the-top Thomas’ English Muffin commercials from the 80s, where some gentle old English chap contentedly recounts his idyllic childhood running down the cobblestone street with a hoop and stick, getting switched at school, wearing knickers, and eating Thomas’ English Muffins (à la A Child’s Christmas in Wales)?
Well, Paula at Dishing the Divine (via Alton Brown) has broken the spell. To make English muffins just like Thomas’, all you need are canning jar lid rings and glorified pancake batter. Tadaa!

    That is not a muffin, it is similar but not identical to a crumpet or pikelet. Real english muffins are close textured bread, no holes whatsoever but you do split and toast them. You can make crumpets on a hotplate with batter and a metal ring, just pour batter into the ring and allow it to solidify before removing the ring and turning them over. The bubbles will form all the way to the top and you don’t cut them in half, just butter them when they are done.
