My latest small victory in the getting-my-second-son-to-eat war involves this quick and easy jack o’ lantern quesadilla. It’s a cheese quesadilla in the shape of a pumpkin, not pumpkin-flavored, just to be clear.
I used cheese for the nose (a triangle-shaped tomato slice would also work), pear pieces for the eyes, carrot sticks for the mouth, and a fresh spinach leaf trimmed on the sides as the pumpkin stem.
You could also use cucumber slices, lettuce, or any other green vegie for the stem. And I can envision using pieces of mango, apple, strawberry, snap peas, green beans, basically whatever fruits and vegetables you have in your cupboards.
To my surprise, my son ate everything, even the spinach, and then asked for more carrots! Maybe next I’ll try to make scrambled eggs look like a ghost. Or green peas and mushrooms shaped into a Christmas tree. Any ideas for tricking kids into eating are most welcome!
