
It’s time to toss out your turkey recipe for next week, because after seeing this bacon-blanketed beauty from The Runaway Spoon, you won’t likely be able to think of any other way of serving the bird for Thanksgiving.
This is the turkey. I’ve been perfecting this for many years now. I must say, it is a showstopper, and delicious to boot, because I treat it well. I send my turkey to a bacon spa. It gets a salt scrub, a bacon butter deep tissue massage, a hand-woven bacon spa robe, some time in the sauna and a little tanning to finish it off.

But does it have any turkey flavor left after all of that bacon richness? I like bacon, but I like turkey and sage flavors too. We once did a butter robe on a turkey – soak an all-cotton dishcloth in butter, drape it over the breast of the turkey and baste it every 15 minutes or so — you can’t let the cloth burn. It came out pretty good, but now I brine the bird (you can use apple cider instead of seasoned salted water) and then do the butter-under-the-skin thing.
