I’m pleased that my son, who usually obsesses over corn dogs and ranch dressing, has finally latched on to a healthy favorite food: salmon. It may put a pinch in our family grocery budget, but watching him gobble up fresh fish like it’s candy is totally worth it. I’m always looking for more ways to prepare salmon besides my old standbys (olive oil/lemon or teriyaki) and I’ve got my eyes on this tasty-looking recipe for roasted almond crusted salmon with pomegranate glaze from How Sweet it Is.
